Pulled BBQ Jackfruit Sliders


Hi guys, I thought I'd take a little break from the vegan baking thing and have a go at making this internet phenomenon, pulled jackfruit. For anyone out of the loop, this is a vegan version of pulled pork using jackfruit instead of pork.




The whole pulled pork thing came about a long time after I went veggie so I've never tried the real thing but the jackfruit version is mighty tasty. 

It's important if you're going to make this that you buy young jackfruit in water or brine. I think it also comes in syrup which is for desserts. So be careful to buy the right jackfruit. 

I managed to pick mine up at HiYou in Newcastle but if you can't get to the shop they also sell it on the online store.









Vegan Pulled "Pork" Jackfruit Sliders

Prep time: 5 minutes
Cook time: 35 minutes
Total time: 40 minutes
Yield: 4 sliders


Ingredients
1 can Young Green Jackfruit in brine or water, drained
1/2 cup red onion, sliced
2 cloves garlic, crushed
1 tsp chili powder
1 tsp brown sugar
a pinch cayenne pepper
4 drops Liquid Smoke
1/2 cup BBQ sauce
1/2 cup water

Cooking Directions

1. Preheat the oven to gas mark 6 then add the sliced onion and garlic to a cast iron skillet with a small amount of oil and fry on a low heat until soft.
2. While the onions are cooking, remove any seeds or tough bits from the drained jackfruit.
3. Once the onions are soft and starting to brown add the chili powder, brown sugar and cayenne. Cook for around five minutes or until the jackfruit starts to gain a little colour.
4. In a jug, mix the Liquid Smoke, BBQ sauce and water, once combined add it to the pan.
5. Place the pan on the top shelf on your oven and cook for 30 minutes.
6. Remove the pan from the oven and with two forks pull the jackfruit apart, it should become stringy and resemble pulled pork.
7. Lightly toast your buns then serve the jackfruit with extra BBQ sauce and some kind of slaw (I made a carrot, kale and red onion slaw). I also made some spicy sweet potato fries.
