Roasted potato, asparagus and lentil salad


It's been a while guys, sorry about that, I've been really busy with some DIY projects so haven't been working on new recipes.
I knocked up this great lentil, asparagas and roasted potato salad the other day and my o my it's amazing.


                                       Harvey was very interested in the lentils. 

Ingredients
1 can green lentils
8 jersey royal potatoes
1 bunch of asparagas
1/2 a small red onion
1 stock cube
1 tsp season all
1 tablespoon dried rosemary 
2 tablespoons olive oil
75ml of water

Method
1. Cube the potatoes and place on a baking tray with half the oil and the rosemary, roast in the oven for 20 minutes at gas mark 6 turning after 10 minutes.
2. Snap the tough ends of the asparagas off and chop, place in an oven dish with the rest if the oil and roast for 10 minutes.
3. In a pan place the chopped onion, lentils, stock cube, season all and place on the hob and simmer for 5 minutes, then drain and serve immediately.
4. Top with the potatoes and asparagas and serve. 

Prep time. 5 mins. Cook time. 20 mins
