Healthy sweet potato and chickpea burgers with Cajun wedges


As I mentioned in my last post we're trying our best to be healthy here at NE Veggie, although I want to be healthy I also wanted a burger. So I came up with this sweet potato chickpea burger. Chickpeas are an excellent source of the essential nutrientsironfolate,phosphorusprotein and are low in fat, and sweet potatoes are just amazing. Low in fat and sweet to take the edge off the spices. Lightly spiced with smoked paprika, cumin and cayenne pepper these burgers are perfect for the upcoming BBQ season, until then just grill them.


The wedges have a wonderful Cajun spice coating and are oven cooked so are kinda healthy too.

Ingridients
3 small sweet potatoes, chopped and boiled
1 can chickpeas, drained
50g breadcrumbs


Spices

1 1/2 tbsp smoked paprika
1 tbsp cumin
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp chili powder
1/4 tsp cyanne pepper

Wedges
2 medium potatoes
Cajun spice mix
1 tbsp olive oil

For the burgers
1. In a bowl mash the chickpeas and sweet potato
2. Add the spices and breadcrumbs and mix.
3. Place the bowl in the fridge for atleast half an hour.
4. Form the mixture into 6 patties and place back in the fridge for half an hour.
5. Heat your grill to a medium heat and place a oven tray under to heat up.
6. Place the patties on the heated tray and place under the grill for 4 minutes each side.

For the wedges
1. Wash and chop the potatoes
2. Place the the potatoes in a bowl with oil and spice mix, mix to coat
3. Spread onto a tray, evenly spaced so they don't touch. Like below
4. Bake at gas mark 6 for 35 minutes

Serve the burgers on whole meal buns with salad


All that for a little under 500 calories per portion. Healthy, tasty and easy to make.
