Sweet Potato & Chickpea Balti





So after a long day at work I wanted to make something, warm and filling.

I decided on this sweet potato and chickpea balti, and here's how to make it. 


What you will need:

4 small or 2 large sweet potatoes
1 small onion
1 clove of garlic
1 can of chickpeas drained
1 can of chopped tomatoes
1 jar of Balti paste (I used Pattaks)
100ml of vegetable stock



To start, chop the onion and garlic and place in a large pan with a small amount of oil.



Fry until soft and starting to colour.

Whilst the onion is frying peel and chop the sweet potato.



Add the entire jar of Balti paste to the pan and cook for 2 minutes.

Then add half the stock and the tin of tomatoes and bring to the boil.


Add the rest of the stock, sweet potato and chick peas and turn down to a simmer for 20 mins, stirring occasionally until the potato is cooked. 

Seve with with rice and poppadoms. 


Price wise this curry didn't break the bank. I managed to pick up the curry paste at B&M for 49p and all the veg and tins were from Aldi so the whole thing cost about 2.24p and there's plenty of veg left over for another meal.
